Ingredients

  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 cup fresh or frozen blueberries

Instructions

  1. Combine the sugar, milk, vegetable oil, eggs, and vanilla extract in a large bowl.
  2. Mix in the all-purpose flour, baking powder, cornstarch, and salt.
  3. Blend gently until just incorporated.
  4. Fold in the blueberries until evenly distributed.
  5. Portion the batter into a standard-sized muffin tin, filling each cup about two-thirds full.
  6. Bake in a preheated oven at 375°F for 20 to 25 minutes.
  7. Cool slightly before serving.
