A heartwarming and nutritious breakfast casserole packed with creamy cottage cheese, wholesome oats, and juicy blueberries.

  • 1 1/2 cups rolled oats
  • 1/2 cup milk
  • 1/4 cup honey
  • 2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh blueberries
  • 1 tablespoon butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Generously grease a 9×9-inch baking dish with butter or cooking spray.
  3. In a large mixing bowl, combine the cottage cheese, rolled oats, milk, honey, baking powder, cinnamon, and salt. Whisk until smooth.
  4. Add the eggs and vanilla extract, beating until thoroughly incorporated.
  5. Gently fold in the fresh blueberries.
  6. Pour the mixture into the prepared baking dish, spreading it evenly.
  7. Dot the top with small pieces of butter.
  8. Bake for about 35 to 40 minutes, or until golden brown and a toothpick comes out clean.
  9. Allow to cool for 5 minutes before slicing and serving.

Notes

Serve warm with Greek yogurt or maple syrup. Pairs well with bacon or fresh fruit salad.
