A soft and moist Blueberry Banana Bread bursting with the sweetness of ripe bananas and tart blueberries. Perfect for breakfast or as a snack.

Ingredients

  • 3 ripe bananas, mashed
  • 1 cup blueberries (fresh or frozen)
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. Mash the bananas in a mixing bowl until smooth.
  3. Stir in the melted butter with the mashed bananas.
  4. Combine the baking soda and a pinch of salt into the mixture.
  5. Add sugar, beaten egg, and vanilla extract; stir until combined.
  6. Incorporate the all-purpose flour just until mixed.
  7. Fold in the blueberries evenly throughout the batter.
  8. Bake for 60-65 minutes or until a toothpick comes out clean from the center.
  9. Cool for about 10 minutes before transferring to a wire rack.

Notes

For maximum sweetness and flavor, use very ripe bananas. This bread can be served with butter or sprinkled with powdered sugar.
