A cozy, fulfilling one-pot meal that combines Tex-Mex flavors with comforting pasta.

Ingredients

  • 8 oz pasta (penne or rotini)
  • 1 lb ground beef or turkey
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can diced tomatoes (14.5 oz), undrained
  • 1 can black beans (15 oz), rinsed and drained
  • 1 cup corn (frozen or canned)
  • 2 cups beef or chicken broth
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Brown the meat in a large pot or skillet over medium heat.
  2. Add the diced onion and minced garlic, cooking until the onion is translucent.
  3. Stir in the taco seasoning and cook for another minute.
  4. Add the diced tomatoes, black beans, corn, pasta, and broth to the pot.
  5. Bring to a boil and then reduce heat to low.
  6. Cover and simmer for about 10-12 minutes or until the pasta is cooked.
  7. Remove from heat and stir in the shredded cheese until melted.
  8. Season with salt and pepper to taste.
  9. Garnish with chopped cilantro before serving.

Notes

For added depth of flavor, consider sautéing the garlic with a bit of oil before adding the meat. Swap meat for plant-based alternatives for a vegetarian option.
