A timeless comfort food recipe featuring tender chicken in a rich broth with fluffy dumplings.

Ingredients

Scale
  • 1 lb chicken (boneless and skinless)
  • 4 cups chicken broth
  • 1 cup milk
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/4 cup butter (melted)
  • 1/2 onion (chopped)
  • 2 carrots (chopped)
  • 2 celery stalks (chopped)
  • 1 teaspoon thyme
  • 1 teaspoon pepper

Instructions

  1. Sauté your base ingredients: In a large pot, combine the chicken, broth, onion, carrots, celery, thyme, and pepper. Bring to a boil, stirring occasionally before reducing to a simmer. Cook until the chicken is tender, about 20 minutes.
  2. Prepare the dumpling mixture: While the chicken is cooking, in a bowl, combine the flour, baking powder, and salt. Stir in the melted butter and milk until just combined. The mixture should be slightly lumpy—this is what makes the dumplings fluffy!
  3. Drop the dumplings: Now it’s time for the fun part! Drop spoonfuls of the dumpling mixture onto the simmering broth. Make sure they are evenly spaced so that they have room to rise as they cook.
  4. Cover and cook: Cover the pot and cook for 15-20 minutes without lifting the lid. This is crucial—the dumplings need that steaming time to become pillowy and cooked through.
  5. Finish and serve: Once the dumplings are done, shred the chicken right in the pot and stir gently to combine. Serve hot, ladling generous portions into bowls.

Notes

Serve with a crisp green salad or homemade cornbread. Ideal for leftovers; store in an airtight container for up to 3 days.
