Ingredients

  • 1 cup uncooked rice
  • 4 cups milk
  • 1 can (14 ounces) condensed milk
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup raisins (optional)
  • Nutmeg for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the rice according to package instructions and set aside.
  3. In a mixing bowl, combine cooked rice, milk, condensed milk, eggs, vanilla extract, cinnamon, and salt. Mix well.
  4. Stir in raisins if using.
  5. Pour the mixture into a greased baking dish.
  6. Bake in the preheated oven for 45-50 minutes or until the pudding is set and lightly golden on top.
  7. Remove from the oven, let it cool slightly, and garnish with nutmeg if desired.
  8. Serve warm or chilled.
