A vibrant and crunchy salad with grated carrots, sweet raisins, and optional walnuts, dressed in a tangy sauce.

Ingredients

  • 4 cups grated carrots
  • 1 cup raisins
  • 1/2 cup chopped walnuts (optional)
  • 1/2 cup plain yogurt or mayonnaise
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Combine the grated carrots and raisins in a large bowl.
  2. Incorporate optional walnuts into the mixture.
  3. Prepare the dressing by mixing yogurt (or mayonnaise), honey, lemon juice, salt, and pepper in a separate bowl.
  4. Dress the salad by pouring the dressing over the carrot mixture and stirring until well combined.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

For best flavor, use fresh carrots and chill the salad before serving. Can be made a day in advance.
