Ingredients

  • 4 cups carrots, chopped
  • 1 onion, chopped
  • 2 tablespoons fresh ginger, grated
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onions and sauté until translucent, about 5 minutes.
  3. Stir in the ginger and cumin, cooking for another minute.
  4. Add the carrots and vegetable broth, bringing the mixture to a boil.
  5. Reduce the heat and let it simmer until the carrots are tender, about 20 minutes.
  6. Use an immersion blender to puree the soup until smooth.
  7. Season with salt and pepper to taste.
