A showstopper dessert that beautifully combines the flavors of a classic carrot cake with a layered presentation, perfect for celebrations.

  • 2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts (optional)
  • Cream cheese frosting (for layering and decorating)

Instructions

  1. Preheat the oven and prepare cake pans by greasing and flouring two 9-inch round cake pans.
  2. Combine the dry ingredients in a large bowl.
  3. Mix the wet ingredients in another bowl and combine with the dry ingredients.
  4. Add the grated carrots, crushed pineapple, and walnuts to the mixture.
  5. Divide the batter evenly between the prepared pans.
  6. Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  7. Cool the cakes in the pans for about 10 minutes, then transfer to wire racks.
  8. Layer the cakes with cream cheese frosting in between and on top.
  9. Decorate as desired and serve at room temperature.
