Hearty and nutritious beet burgers made with beets and quinoa, perfect for a filling meal.

Ingredients

  • 2 medium beets, cooked and peeled
  • 1/2 cup cooked quinoa
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • Olive oil, for cooking
  • Burger buns, for serving
  • Lettuce, tomato, and other desired toppings

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, mash the cooked and peeled beets until smooth.
  3. Add cooked quinoa, breadcrumbs, chopped onion, minced garlic, cumin, salt, and pepper. Mix until well combined.
  4. Form the mixture into 4 patties.
  5. Heat olive oil in a skillet over medium heat and cook the patties for about 5 minutes on each side until golden brown.
  6. Alternatively, bake the patties on a lined baking sheet for 25-30 minutes, flipping halfway through.
  7. Serve on burger buns with lettuce, tomato, and any other desired toppings.

Notes

Leftover burgers can be stored in an airtight container in the fridge for up to 3 days. For longer storage, freeze uncooked patties layered between parchment paper.
