Juicy beef encasing molten, cheesy goodness and crunchy bacon, topped with a sweet and tangy barbecue glaze.

Ingredients

  • 2 lbs ground beef
  • 1 cup breadcrumbs
  • 2 eggs
  • 1/2 cup barbecue sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 8 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/2 cup barbecue sauce (for glazing)

Instructions

  1. Preheat your oven to 375°F.
  2. In a large bowl, mix together the ground beef, breadcrumbs, eggs, 1/2 cup barbecue sauce, garlic powder, onion powder, salt, and pepper until well combined.
  3. Take a small amount of the meat mixture and flatten it in your hand.
  4. Add a spoonful of crumbled bacon and shredded cheddar cheese in the center, then wrap the meat around the filling to form a ball.
  5. Repeat with the remaining meat mixture until all bombs are formed.
  6. Place the meatloaf bombs on a baking sheet lined with parchment paper.
  7. Bake in the preheated oven for 25-30 minutes or until fully cooked.
  8. Brush the meatloaf bombs with the remaining 1/2 cup of barbecue sauce and bake for an additional 5 minutes.
  9. Serve hot and enjoy!

Notes

Leftover meatloaf bombs can be stored in an airtight container in the refrigerator for up to 3 days. They freeze well for up to 3 months.
