2 lbs ground beef
1 cup breadcrumbs
2 eggs
1/2 cup barbecue sauce
1 tsp garlic powder
1 tsp onion powder
Salt and pepper to taste
8 slices bacon, cooked and crumbled
1 cup shredded cheddar cheese
1/2 cup barbecue sauce (for glazing)
Instructions
Preheat your oven to 375°F.
In a large bowl, mix together the ground beef, breadcrumbs, eggs, 1/2 cup barbecue sauce, garlic powder, onion powder, salt, and pepper until well combined.
Take a small amount of the meat mixture and flatten it in your hand.
Add a spoonful of crumbled bacon and shredded cheddar cheese in the center, then wrap the meat around the filling to form a ball.
Repeat with the remaining meat mixture until all bombs are formed.
Place the meatloaf bombs on a baking sheet lined with parchment paper.
Bake in the preheated oven for 25-30 minutes or until fully cooked.
Brush the meatloaf bombs with the remaining 1/2 cup of barbecue sauce and bake for an additional 5 minutes.

Notes
Leftover meatloaf bombs can be stored in an airtight container in the refrigerator for up to 3 days. They freeze well for up to 3 months.
