Warm, cozy, and bursting with flavor, these banana nut muffins are a comforting treat perfect for breakfast or a snack.

Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. Mash the bananas with the melted butter in a large mixing bowl.
  3. Stir in the baking soda and salt until well combined.
  4. Mix in the sugar, beaten egg, and vanilla extract.
  5. Add the flour and mix until just combined, folding in walnuts if using.
  6. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for about 18-20 minutes or until a toothpick comes out clean.
  8. Allow to cool before serving.

Notes

Use overripe bananas for maximum sweetness. For a crunchier top, sprinkle sugar on top before baking.
