A delightful and moist cake layered with gooey bananas and caramel goodness, evoking fond childhood memories.

  • 3 ripe bananas, sliced
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 1/4 cup dark rum (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a round cake pan.
  2. Melt the butter and brown sugar in a skillet over medium heat. Add the sliced bananas and simmer for 2-3 minutes until caramelized. Pour into the bottom of the greased cake pan.
  3. Cream together granulated sugar and remaining butter until light and fluffy. Add egg and vanilla, mixing well.
  4. In a separate bowl, combine flour, baking powder, baking soda, and salt. Gradually add to the creamed mixture, alternating with buttermilk.
  5. Pour the batter over the banana mixture in the pan, spreading evenly.
  6. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes before inverting it onto a serving plate.
  8. If using, drizzle rum over the cake before slicing and serving warm.

Notes

For best results, use ripe bananas and allow proper cooling to maintain the cake’s structure. Optional additions include nuts or other fruits.
