Delightful muffins filled with ripe bananas and chocolate chips, perfect for breakfast or a snack.

Ingredients

  • 2 ripe bananas
  • 1 cup chocolate chips
  • 1/2 cup walnuts (chopped)
  • 1/4 cup butter (melted)
  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mash the bananas in a medium bowl until smooth with some small lumps.
  3. Add the melted butter, sugar, egg, and vanilla extract to the bananas and mix well.
  4. Whisk together the flour, baking soda, and salt in another bowl.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Fold in the chocolate chips and chopped walnuts until evenly distributed.
  7. Divide the batter among the muffin cups, filling each about 2/3 full.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Cool the muffins in the pan for a few minutes before transferring them to a wire rack.
