A comforting loaf of banana bread made with overripe bananas, perfect for breakfast or dessert.

Ingredients

  • 3 ripe bananas
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mash the ripe bananas in a mixing bowl with a fork until smooth.
  3. Stir in the melted butter into the mashed bananas.
  4. Mix in the baking soda and a pinch of salt.
  5. Add the sugar, beaten egg, and vanilla extract, mixing until well combined.
  6. Incorporate the flour until just mixed; be careful not to overmix.
  7. Pour the batter into a greased 4×8 inch loaf pan and bake for 60-65 minutes.
  8. Cool in the pan for a few minutes before transferring to a wire rack.

Notes

Store in an airtight container at room temperature for up to 3 days or in the fridge for a week. Can freeze for up to 3 months.
