A hearty and wholesome dish featuring tender chicken breasts marinated in balsamic vinegar, served with sautéed spinach and juicy cherry tomatoes.

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 4 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, combine balsamic vinegar, olive oil, minced garlic, oregano, salt, and pepper.
  3. Place the chicken breasts in a baking dish and pour the balsamic mixture over them, ensuring they are well-coated.
  4. Bake the chicken in the preheated oven for 20 minutes.
  5. While the chicken bakes, sauté the spinach and cherry tomatoes in a pan over medium heat for 3-4 minutes, until the spinach is wilted and the tomatoes are softened.
  6. Remove the chicken from the oven and top each piece with the sautéed spinach and tomatoes.
  7. Return the dish to the oven and bake for an additional 10-15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  8. Optionally, sprinkle grated Parmesan cheese over the chicken before serving.

Notes

Marinate the chicken for a few hours for deeper flavor. Use fresh ingredients for the best taste.
