A healthy and delicious meal featuring salmon and spinach, perfect for busy weeknights or special occasions.

  • 4 salmon fillets
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Lemon wedges for serving

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute.
  3. Add fresh spinach and cook until wilted.
  4. Place salmon fillets in a baking dish, season with salt and pepper, and top with the sautéed spinach.
  5. Bake in the oven for 15-20 minutes, or until the salmon is cooked through.
  6. Serve with lemon wedges and your choice of quinoa or brown rice.

Notes

Make sure not to overcook the salmon. Using fresh salmon fillets will yield the best results. You can also add other spices or herbs for extra flavor.
