Healthy and comforting baked salmon meatballs paired with a creamy avocado sauce, perfect for a family dinner or entertaining guests.

Ingredients

  • 1 lb salmon fillet, skin removed
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tbsp fresh dill, chopped
  • Salt and pepper to taste
  • 1 ripe avocado
  • 1/4 cup Greek yogurt
  • 1 tbsp lime juice
  • 1/2 tsp garlic powder

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Flake the salmon into bite-sized pieces.
  3. Add breadcrumbs, Parmesan cheese, egg, minced garlic, dill, salt, and pepper to the salmon and mix well.
  4. Form the mixture into golf ball-sized meatballs.
  5. Arrange the meatballs on a baking sheet lined with parchment paper.
  6. Bake for 15-20 minutes until golden brown.
  7. Make the avocado sauce by blending avocado, Greek yogurt, lime juice, garlic powder, salt, and pepper until smooth.
  8. Serve the meatballs warm with avocado sauce for dipping.

Notes

These meatballs can be stored in the refrigerator for up to 3 days or frozen for 2 months. Reheat in the oven for best results.
