A comforting and creamy dish featuring tender chicken in a dreamy cream cheese sauce, perfect for weeknight dinners and potlucks.

Ingredients

  • 4 chicken breasts
  • Salt and pepper, to taste
  • 1 tsp paprika
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 8 oz cream cheese, softened
  • 2 tbsp fresh chives, chopped
  • 1 cup shredded cheddar cheese (optional)
  • Cooking spray or olive oil, for greasing

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. Season the chicken breasts with salt, pepper, and paprika on both sides.
  3. Sear the chicken in a skillet with olive oil for 2-3 minutes on each side until golden brown.
  4. Sauté the minced garlic in the same skillet for 30 seconds until fragrant.
  5. Create the creamy sauce by stirring in chicken broth and reducing slightly, then adding softened cream cheese until smooth.
  6. Add chopped fresh chives and season the sauce with salt and pepper to taste.
  7. Assemble the dish by placing seared chicken in the baking dish and pouring the cream cheese mixture over it. Optional: sprinkle shredded cheddar on top.
  8. Bake for 25-30 minutes, or until chicken reaches an internal temperature of 165°F (74°C). Broil for the last 2-3 minutes if using cheese.
  9. Garnish with fresh parsley and serve warm.

Notes

This dish pairs well with roasted vegetables, rice, or a fresh salad. Leftovers can be stored for up to 3 days.
