  • 1/2 tsp baking soda
  • 1/2 tsp salt

  • 1/2 cup Baileys Irish Cream
  • 1/2 cup brewed coffee (cooled)
  • 1 tsp vanilla extract

Instructions

  1. Preheat the Oven and Prepare the Pan: Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. Whisk the Dry Ingredients: In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Mix the Wet Ingredients: In another bowl, mix the eggs, vegetable oil, Baileys, brewed coffee, and vanilla together.
  4. Combine Dry and Wet Ingredients: Combine the wet ingredients with the dry ingredients and mix until just combined.
  5. Fill Those Cupcake Liners: Fill the cupcake liners about 2/3 full with batter.
  6. Bake to Perfection: Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Cool and Frost: Let cool before frosting if desired.
