  • 2 apples (Honeycrisp or Granny Smith), peeled and diced
  • 2 tablespoons unsalted butter
  • 1 tablespoon pure maple syrup
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ⅛ teaspoon ground cloves
  • ¼ teaspoon salt
  • ¼ cup chopped pecans
  • 2 tablespoons dried cranberries
  • Plain Greek yogurt or whipped cream (optional)

Instructions

  1. Preheat the oven to 400°F. Pierce each sweet potato several times with a fork and arrange them on a baking sheet. Roast for 45 to 55 minutes until tender.
  2. In a skillet, melt the butter over medium heat. Add the diced apples and cook until softened, about 5 minutes.
  3. Stir in maple syrup, cinnamon, nutmeg, cloves, and salt. Cook for an additional 2 minutes, stirring occasionally to ensure even flavor.
  4. Once the sweet potatoes are roasted, slice them lengthwise and fluff the flesh with a fork to create an inviting space for the filling.
  5. Spoon the warm spiced apple mixture evenly into each potato cavity, letting the irresistible smells of the spices envelop you.
  6. Sprinkle the chopped pecans and dried cranberries on top for added texture and flavor.
  7. Serve warm, optionally topped with a dollop of plain Greek yogurt or a drizzle of whipped cream for that extra touch of indulgence.

Notes

These stuffed sweet potatoes can be prepared ahead of time and stored in the refrigerator for up to 3 days. They can also be frozen for up to 3 months.
