Delightful bite-sized desserts that combine the creamy decadence of cheesecake with the nostalgic flavors of an apple crisp.

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 1 tsp ground cinnamon
  • ½ cup melted butter
  • 8 oz cream cheese, room temperature
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 2 cups diced apples (e.g., Granny Smith or Honeycrisp)
  • 1 tbsp fresh lemon juice
  • ⅓ cup brown sugar
  • 1 tbsp cornstarch
  • ½ cup all-purpose flour
  • ½ cup quick oats
  • ¼ cup brown sugar

Instructions

  1. Preheat the oven to 175°C (350°F) and line 16 muffin cups with paper liners.
  2. In a bowl, combine graham cracker crumbs, granulated sugar, ground cinnamon, and melted butter. Press approximately 1 tablespoon into the bottom of each muffin cup.
  3. Beat the cream cheese until smooth, then mix in granulated sugar, cinnamon, and vanilla. Add the eggs one at a time, mixing gently until combined.
  4. Spoon 3 tablespoons of cheesecake batter into each muffin cup over the crust.
  5. Toss diced apples with lemon juice, brown sugar, cinnamon, nutmeg, and cornstarch until evenly coated.
  6. Top each cheesecake batter portion with 1-2 tablespoons of the apple mixture.
  7. In a separate bowl, whisk together flour, oats, brown sugar, and cinnamon. Mix in melted butter until crumbly.
  8. Sprinkle crumble topping over each cheesecake.
  9. Bake for 25-30 minutes or until slightly set in the center.
  10. Allow to cool on a wire rack, then refrigerate until ready to serve. Optionally, drizzle with caramel sauce before serving.

Notes

For best results, use room temperature cream cheese and choose sweet-tart apples for optimal flavor.
