  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup maple syrup
  • 8 oz cream cheese, softened
  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch square baking pan.
  2. In a saucepan, bring the apple cider to a boil, then reduce to a simmer until it reduces to about 1/2 cup. Allow to cool.
  3. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Cream the softened butter and granulated sugar until light and fluffy, then beat in eggs, vanilla extract, and the reduced apple cider.
  5. Gradually add dry ingredient mixture to wet ingredients and mix until just combined.
  6. Pour the batter into the prepared pan and bake for 25-30 minutes, until a toothpick inserted comes out clean.
  7. While the cake cools, beat together cream cheese and maple syrup until smooth, then gradually add powdered sugar until you achieve a creamy consistency.
  8. Once cooled, frost the cake generously with the maple-cream cheese frosting and enjoy!
