Apple Cider Pork with Mashed Sweet Potatoes

A delightful dish featuring marinated pork tenderloin in apple cider served with creamy mashed sweet potatoes.

Ingredients

  • 1.5 pounds Pork tenderloin, trimmed and cut into medallions
  • 1 cup Apple cider
  • 1 medium Onion, sliced
  • 3 cloves Garlic, minced
  • 2 tablespoons Olive oil
  • 1 teaspoon Thyme, fresh or dried
  • Salt and Pepper, to taste
  • 1 tablespoon Butter
  • 1 tablespoon Cornstarch (optional)
  • 2 large Sweet potatoes, peeled and cubed
  • 2 tablespoons Butter
  • ¼ cup Heavy cream or milk
  • Salt, to taste
  • ¼ teaspoon Cinnamon (optional)

Instructions

  1. Marinate the Pork: In a bowl, combine the pork medallions with ½ cup of apple cider, minced garlic, thyme, salt, and pepper. Let it marinate for at least 15-30 minutes.
  2. Prepare the Sweet Potatoes: In a pot, bring salted water to a boil, add the cubed sweet potatoes and cook for about 15-20 minutes until tender. Drain and return to pot.
  3. Sear the Pork: Heat olive oil in a skillet. Remove pork from marinade and sear in skillet for 3-4 minutes on each side. Remove from skillet.
  4. Sauté the Onion: In the same skillet, add sliced onion and sauté for 3-4 minutes.
  5. Create the Sauce: Pour in reserved marinade and remaining apple cider. Simmer, then return pork and cook for 10-15 minutes.
  6. Thicken the Sauce (Optional): Mix cornstarch with water and stir into sauce. Cook until thickened, then add butter.
  7. Mash the Sweet Potatoes: Add butter, heavy cream, salt, and cinnamon, and mash until smooth.
  8. Plate and Serve: Plate mashed sweet potatoes, top with apple cider pork and sauce. Garnish with thyme.

Notes

For maximum flavor, marinate the pork overnight. Allow the pork to rest for a few minutes after cooking.
