  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella balls
  • 1/2 cup black olives, sliced
  • 1/2 cup salami, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Begin by cooking the tortellini according to package instructions. Once they’re perfectly al dente, drain them and let them cool while you prepare the other ingredients.
  2. In a large bowl, combine the cooled tortellini, cherry tomatoes, mozzarella balls, sliced black olives, diced salami, and thinly sliced red onion.
  3. In a separate small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
  4. Pour the dressing over the tortellini salad and toss gently to ensure everything is evenly coated.
  5. You can serve the salad immediately or refrigerate it for up to 2 hours before serving. Garnish with fresh basil.

Notes

For a creamier salad, consider adding a dollop of pesto or Parmesan cheese. Substitute salami with roasted vegetables for a vegetarian version.
