Ingredients

  • 1 cup cake flour
  • 1 1/2 cups granulated sugar
  • 1/2 teaspoon salt
  • 1 cup egg whites (about 8 large eggs)
  • 1 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sift together the cake flour, salt, and half of the granulated sugar in a bowl.
  3. Beat the egg whites with cream of tartar until soft peaks form.
  4. Gradually add in the remaining sugar, continuing to beat until stiff peaks form.
  5. Fold in the flour mixture and the extracts just until combined.
  6. Pour the batter into an ungreased tube pan.
  7. Bake for 30-35 minutes until the top is golden brown.
  8. Invert the pan and let it cool completely before removing the cake.
  9. Serve plain or with fresh fruits and whipped cream.

Notes

Use room temperature egg whites for better volume. Ensure your mixing bowl is grease-free.
