Deliciously moist banana muffins made with wholesome oats, perfect for breakfast or a snack.

Ingredients

  • 2 cups rolled oats
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 3 very ripe medium bananas, mashed (about 1 1/2 cups)
  • 1/2 cup unsweetened applesauce
  • 1/4 cup maple syrup (optional)
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. Mix the rolled oats, baking soda, cinnamon, and salt together in a large bowl.
  3. Add the mashed bananas, applesauce, maple syrup, egg, and vanilla extract to the dry ingredients.
  4. Mix everything together just until combined; do not overmix.
  5. Divide the batter evenly among the 12 muffin cups, filling them about two-thirds full.
  6. Pop them into the oven and bake for 18 to 22 minutes, or until a toothpick comes out clean.
  7. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack.

Notes

For the best flavor, use overripe bananas. Muffins can be stored in an airtight container at room temperature for up to 3 days or frozen for up to 3 months.
