A rich and creamy cheesecake infused with the nutty essence of Amaretto liqueur and topped with toasted almonds, perfect for any special occasion.

  • ½ cup unsalted butter, melted
  • 2 tablespoons sugar
  • 2 (8-ounce) packages cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup Amaretto liqueur
  • ½ cup sour cream
  • ¼ cup chopped toasted almonds for garnish

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Mix together almond flour, melted butter, and sugar until well combined, then press into a 9-inch springform pan.
  3. Beat the softened cream cheese in a mixing bowl until smooth.
  4. Add in 1 cup of sugar gradually, mixing until fully incorporated.
  5. Incorporate the eggs one at a time, mixing until fully combined each time.
  6. Stir in vanilla extract, Amaretto liqueur, and sour cream until smooth.
  7. Pour the cream cheese mixture over the prepared crust, spreading evenly.
  8. Bake for 50-60 minutes until the center is set but slightly jiggly.
  9. Turn off the oven and let the cheesecake cool inside for about an hour.
  10. Chill in the fridge for at least 4 hours or overnight before serving.
  11. Garnish with chopped toasted almonds before serving.

Notes

For best results, ensure the cream cheese is softened before blending. Allow cooling slowly in the oven to prevent cracks.
