A moist and sweet gluten-free banana bread made with almond flour and naturally sweetened with honey or maple syrup.

  • 2 cups almond flour
  • 3 ripe bananas
  • 3 eggs
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Mash the ripe bananas until smooth.
  3. Add eggs, honey (or maple syrup), and vanilla extract to the mashed bananas; whisk until combined.
  4. Combine the almond flour, baking soda, baking powder, and salt in another bowl.
  5. Gradually add the dry ingredients to the banana mixture and mix gently.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake in the preheated oven for about 50-60 minutes.
  8. Cool for a few minutes before removing from the pan and slicing.

Notes

Store in an airtight container at room temperature for up to 3 days, or refrigerate for a week. Freezes well for up to 2 months.
