  • 1.5 lbs chicken (cut into pieces)
  • 1 medium onion (chopped)
  • 2 carrots (sliced)
  • 2 celery stalks (sliced)
  • 2 potatoes (diced)
  • 4 cups chicken broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup green beans (fresh or frozen)
  • 2 cloves garlic (minced)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the chopped onions, minced garlic, sliced carrots, and celery, sautéing until they soften.
  2. Transfer the aromatic mixture to a slow cooker. Add the chicken pieces, diced potatoes, fresh green beans, diced tomatoes, and chicken broth.
  3. Pour in the Worcestershire sauce and sprinkle in the thyme, paprika, salt, and pepper. Mix well.
  4. Stir until well combined. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  5. Serve hot, garnished with vibrant herbs if desired.

Notes

For richer flavor, consider browning the chicken before adding it to the slow cooker. Leftovers can be stored in an airtight container for up to 3-4 days.
