A vibrant stew that combines chicken, sweet potatoes, and a creamy peanut butter sauce, bringing warmth and flavor to your dinner table.

  • 2 lbs chicken (cut into pieces)
  • 1 onion (chopped)
  • 3 cloves garlic (minced)
  • 1 inch ginger (grated)
  • 1 bell pepper (chopped)
  • 2 cups chicken broth
  • 1 cup creamy peanut butter
  • 1 can diced tomatoes
  • 2 cups sweet potatoes (peeled and diced)
  • 1 cup spinach (optional)
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Heat the vegetable oil over medium heat. Add the chopped onion, garlic, and ginger, sauté until fragrant.
  2. Add the chicken pieces and brown on all sides for about 5-7 minutes.
  3. Stir in the bell pepper, diced tomatoes, and sweet potatoes.
  4. Pour in the chicken broth and sprinkle in the cumin, coriander, salt, and pepper. Stir until mixed and bring to a gentle simmer.
  5. Cover and cook for about 25-30 minutes until the chicken is cooked through and the sweet potatoes are tender.
  6. Stir in the creamy peanut butter until fully incorporated.
  7. Toss in the spinach (if using) and cook for another 5 minutes.
  8. Serve hot, garnished with chopped cilantro.

Notes

This stew is delicious on its own or served with rice, crusty bread, or a green salad. Leftovers can be stored in the fridge for up to 3 days or frozen for up to 3 months.
