A vibrant taco salad layered with fresh ingredients, perfect for gatherings and weeknight dinners.

Ingredients

  • 1 head of romaine lettuce, chopped
  • 1 can of black beans, drained and rinsed
  • 1 can of corn, drained
  • 1 cup of cherry tomatoes, halved
  • 1 cup of shredded cheese (cheddar or Mexican blend)
  • 1 avocado, diced
  • 1 cup of sour cream or Greek yogurt
  • 1 packet of taco seasoning
  • Tortilla chips for topping

Instructions

  1. In a large serving bowl, layer the chopped romaine lettuce as the base.
  2. Add the black beans on top of the lettuce.
  3. Layer the corn over the black beans.
  4. Add the cherry tomatoes evenly on top.
  5. Sprinkle the shredded cheese over the tomatoes.
  6. Add the diced avocado as the next layer.
  7. Mix the sour cream with the taco seasoning and spread over the avocado layer.
  8. Finally, top with crushed tortilla chips for crunch.
  9. Serve immediately and enjoy!

Notes

Store leftovers in an airtight container for up to 2 days, keeping tortilla chips separate until serving.
