A quick and easy recipe to transform Thanksgiving leftovers into delicious quesadillas.

  • 2 cups leftover turkey, shredded
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 4 flour tortillas
  • 1/2 cup diced bell peppers (optional)
  • 1/2 cup diced onions (optional)
  • Sour cream and salsa for serving

Instructions

  1. Heat the skillet over medium heat.
  2. Assemble the quesadilla by placing one tortilla in the skillet and topping it with turkey and cheese.
  3. Top with another tortilla and press down gently.
  4. Sauté until the bottom is golden brown, about 3-4 minutes.
  5. Flip the quesadilla carefully and cook the other side until crispy and golden brown.
  6. Slice the quesadilla into wedges.
  7. Add sour cream and salsa before serving.

Notes

For extra flavor, brush tortillas with olive oil or butter before cooking. Use pre-shredded cheese to save time.
