1/2 cup cottage cheese
1 tablespoon cocoa powder
1 tablespoon sweetener (sugar, honey, or a sugar substitute)
1 tablespoon almond flour or all-purpose flour
1/4 teaspoon baking powder
1/2 teaspoon vanilla extract
Optional toppings (chocolate chips, nuts, etc.)
Instructions
In a microwave-safe bowl, mix together the cottage cheese, cocoa powder, sweetener, almond flour, baking powder, and vanilla extract until well combined.
Microwave on high for 1 minute. After the minute, check if it’s cooked through; if it needs more time, microwave for an additional 10-15 seconds.
Allow to cool slightly, then top with optional toppings if desired. Enjoy your brownie!
Notes
Best enjoyed fresh, but can be stored in an airtight container in the fridge for up to 2 days. Reheat before consuming.
